Confirmed Speakers

PhD Leo Gracin was born in 1973 in Split, Croatia. He is assistant professor at Faculty of Food Technology and Biotechnology, University of Zagreb, and currently he is a lecturer at BSc and MSc level studies (Instrumental analysis, Raw materials for food industry, Wine technology, Production of predicate, special and sparkling wines and Sensory and chemical evaluation of wine). Also, he is a supervisor of undergraduate and graduate students. His research interest involve: wine production, microbiology of wine (Brettanomyces yeasts, lactic acid bacteria), aroma and phenolic characteristics of wine as well as wine sensory analyses. He participated in several national and international scientific and technological projects and currently he is involved in project concerning the possible application of innovative technologies (high power ultrasound, high hydrostatic pressure and cold plasma) in controlling microbiological stability of wine with lower sulfur dioxide content.
